Before the chef's whites, Shawn Fralin wore the patch of the Rakkasan — the 187th Infantry Regiment of the 101st Airborne. Preparation, precision, the quiet authority of a team under pressure. He brings the same discipline to the table.
His cooking is shaped by the places he's eaten in and the people he's cooked for. A vineyard lunch in Burgundy. A market morning in Mendoza. A long table on the Cape, candles guttering, someone's grandmother insisting on one more course. Those rooms live inside the menu.
Twenty years in private service — most recently Executive Chef & F&B Director at The Ritz-Carlton Residences Miami Beach — have taught him to read a table the way a sommelier reads a cellar: who wants to talk, who wants to taste, when to step forward, when to vanish.
His work has been written across 25 countries and hundreds of cities — vineyards from Burgundy to Mendoza to the Cape, regional markets, the kitchens of friends. A presenter and on-air voice featured on Food Network, MTV, TLC, and Fine Living TV.
On Rakkasan Chef.
Rakkasan Chef is the practice that contains all of that work. Most of what the chef cooks remains private — in residences, on yachts, in homes that don't appear on any menu. The Rakkasan Chef Experience is the small share of work the chef releases to the public: a few private evenings a year, each one composed once, served once, lived only in the memory of those at the table.
Series I — An Italian Evening — opens that practice. Eight courses, twenty seats, one summer night in Coral Gables. The first of a small recurring series, each chapter built around a single culinary tradition, served only once.
